I recently discovered these at our annual Teacher Appreciation Luncheon at Ballet Tech. One of the mother’s is a “gluten avoider” as she called herself, and I was delighted that there was a dessert that I could eat! These are so simple–gluten free, dairy free, and delicious!
1 cup peanut butter (I used Skippy creamy)
1 cup sugar
1/2 tsp vanilla
1/2 tsp baking soda
pinch of salt
Blend the peanut butter and sugar together until creamy. Add the egg and combine. Mix in the baking soda, salt and vanilla. Form into 1 inch balls and then cross hatch each cookie and sprinkle with sugar. Bake at 350 degrees for 8-10 minutes.
