Is there such thing as a healthy cookie?

Not all treats have to come with guilt.  Coconut gets the spotlight in these gluten-free, vegan, and Candida diet-friendly cookies.  An excellent source of healthy, saturated fat, coconut is also anti-fungal, anti-bacterial, and said to boost endurance by providing a source of quick energy. Sweetened with stevia, you won’t miss the sugar in these cookies.  In fact, you might want to make a double batch you’ll love them so much.  




Gluten-free  NO Bake Chocolate Coconut Cookies   

Makes 12-16 cookies


6 Tablespoons high quality, organic cocoa powder

1 teaspoon vanilla extract

2/3 cup coconut or almond milk

1/3 cup coconut cream

1 tsp. cinnamon

7 packets stevia (about 1 ½ teaspoons)

½ teaspoon salt

2 ½ cups shredded, unsweetened coconut


In a medium bowl, combine cocoa powder, cinnamon, stevia, salt and coconut, and mix to combine.  In a separate, smaller bowl, whisk together vanilla extract, coconut or almond milk, and coconut cream.  Add to dry ingredients and mix throuroughly into the dry ingredients, mashing any lumps of cocoa or coconut.  Once well combined, and slightly doughy, roll into tablespoon sized balls and press lightly onto a parchment lined cookie sheet.  Place in your freezer for about 2 hours, or until firm.  Thaw before eating and be sure to store in the fridge.
