Tammi’s Teeny Tiny Kitchen–Easy Peanut Butter Cookies

I recently discovered these at our annual Teacher Appreciation Luncheon at Ballet Tech. One of the mother’s is a “gluten avoider” as she called herself, and I was delighted that there was a dessert that I could eat! These are so simple–gluten free, dairy free, and delicious!

1 cup peanut butter (I used Skippy creamy)

1 cup sugar

1 egg

1/2 tsp vanilla

1/2 tsp baking soda

pinch of salt

Blend the peanut butter and sugar together until creamy. Add the egg and combine. Mix in the baking soda, salt and vanilla. Form into 1 inch balls and then cross hatch each cookie and sprinkle with sugar. Bake at 350 degrees for 8-10 minutes.

    Ooh, I love these. I’ve made them with sunflower seed butter and about a third less sugar, and they were amazing. And practically virtuous! Yum.

    Oh yeah, I have to try these for my sis. She’s allergic to yeast, so gluten free is a good alternative for her. Have you ever tried baking alternatives for high altitudes?

    Stephanie: I’m allergic to yeast too, and it is a great recipe! I made them with a sugar substitute for my dad this weekend and he loved them. I haven’t tried any high altitude alternatives….I’ll keep you posted if I do :) .
